Osso Buco Elk Recipe

We had 4 bone in Elk "Osso Buco" cuts (about 8-12 oz each) to cook and a bird hunt to get to so we needed to pick an easy recipe. I love cooking most things in a slow cooker because the flavor is more full and savory so we decided to make an Osso Bucco style slow cooker elk dish.
Ingredients:
1 carton chicken stock (low sodium)
1 can tomato paste (small can)
1/3 cup raw honey
1/3 cup balsamic vinegar
1/2 cup of Dijon mustard
1/8 cup of chopped garlic and oil (from the store bought pre-chopped garlic in oil jars)
1 white onion chopped in 1/2 inch squares
1 carton of chopped mushrooms
3-4 tablespoons of your favorite spice blend - we used Kinder's All Purpose Meat & Veggie Rub Spices
4 Bone In Elk Cuts (ours were Rear Shank cuts - check out the diagram below)
Directions:
Add all ingredients except for the meat into the crockpot, stir them uo, and then set it on low for 1 hour.
At the 1 hour mark add in the meat cuts and then keep on low and cook for 6hrs.
At 6hrs check the meat and if it's falling off the bone, it's ready to eat! If it's not quite falling yet, turn up the heat to high and cook for another 30-60 min or until the meat loosens.
Serving options:
Garnish with fresh parsley or basil for a little extra flair.
